grilled ricotta pound cake with caramelized peach frozen yogurtI nearly missed it. It’s 7:40 p.m. and I just found out that today is National Grilled Cheese Day. I usually don’t need an excuse to make cheese anything. I vote to extend it to become National Grilled Cheese Month. Melted gooey cheese on buttered bread. Is there anything better? If I’d known I would have stocked up on a variety of cheeses; maybe make some Croques Monsieurs. But dinner is already on the grill and on the stove. What can I do?

I’ve got a lemon ricotta pound cake baking in the oven (I quickly adapted an orange ricotta pound cake because I had no more oranges). There’s cheese in that. I bet it would be good covered in butter and grilled. And to be sure it counts as grilled cheese I’ll add some slices of Gruyere between two slices of pound cake. (I wish I had some Brie, or some goat cheese. I’m ashamed that my pantry and frig aren’t better stocked.)

What other food holidays am I missing? I learned that it’s Peach Cobbler Day tomorrow. I’ve got some homemade caramelized peach frozen yogurt that could be dolloped on top of the grilled cheese pound cake (with some Amaretto whipped cream and chocolate, of course.)

Whew. Two national food holiday disasters averted. I’ve done my part towards world peach, I mean, peace.
