I need to talk to whoever schedules these holidays. It’s Monday. It’s a work day. And we’re in the midst of a Nor’easter. A picnic lunch at work would have been a fun way to begin the work week, if I’d only known in time. Instead we’re having a Picnic Night at home instead.
I took my vintage red gingham tablecloth out and brought some of our outdoor favorites in. I had some rotisserie chicken just waiting to be chopped up for salad and grape tomatoes needing to get warmed up on this chilly day.
We didn’t get to spend the day outside lounging on the green grass in the bright sunshine, but we spent a nice evening enjoying picnic-worthy bites, sans ants.
Picnic Night Menu:
- BLT Pasta
- Chicken Salad Sandwich Bites (sorry, no recipe; I just use what I’m in the mood for.)
- Potato Wedges
- Glazed Radishes
- Spiked Lemonade (just add a little vodka and limoncello…)
- Pear Chocolate Frangipane Tart
- Sliced strawberries and grapes
