The smokiness from the paprika and chipotle EVOO give this dish a nice flavor. The peach jam balances the smoke and adds at least one serving of fruit, right? I find it difficult to take good photos of food from a slow cooker, so use your imagination. It definitely tasted better than it looks.

A 3-4 lb pork would be sufficient, but I like to make extra to be used in another recipe later in the week. I plan to try a pork croquette with pumpkin and mashed potatoes on Wednesday…

sweet and sassy porkWhat you need:

  • 2 1/2 pounds sweet potatoes, peeled and cut into 1-1/2-inch chunks
  • 6 lb boneless pork roast
  • 3 oz pancetta
  • 1/2 Vidalia onion, chopped
  • 3 garlic cloves, finely chopped
  • 1 7-oz can chopped green chilies
  • 3 garlic cloves, finely chopped
  • 1 1/2 c vegetable broth
  • 4 tbs Devo Olive Oil Chipotle EVOO
  • 3/4 c peach jam
  • 4 tsp cornstarch
  • 1 tbs smoked Spanish paprika
  • Freshly ground sea salt and pepper to taste

What you do:

  • Heat about 1 tbs EVOO in sauté pan.
  • Add pancetta, onion and garlic.
  • Cook until pancetta is crispy.
  • While pancetta is cooking, combine smoked paprika, salt and pepper in small bowl.
  • Rub seasoning onto pork.
  • Remove pancetta mixture from pan and set aside.
  • Add another tbs EVOO to pan and reheat.
  • Add pork and brown on all sides.
  • Place potatoes in the bottom of slow cooker.
  • Place meat on top of potatoes.
  • In blender, processor or with immersion blender, mix broth with jam
  • Pour broth mixture over pork.
  • Add chilies.
  • Cover and cook on high-heat setting for 3-1/2 to 4-1/2 hours, adding pancetta mixture during the last 30 min of cooking.
  • Transfer pork to serving platter.
  • Using slotted spoon, transfer sweet potatoes to lg bowl and mash; transfer some of the pancetta, too.
  • Strain cooking liquid, skimming fat.
  • Measure 2 c of the cooker broth, add additional vegetable broth if needed.
  • Add liquid to med saucepan.
  • Add cornstarch and whisk to combine.
  • Cook over med heat until thickened, stirring often.
  • Serve sauce with pork and mashed sweet potatoes.
