I needed a snack to go along with the Fluffy & Smashed ‘Rita. So I wouldn’t get smashed I sliced up some Italian bread and mixed up two pumpkin spreads.

Sounds a lot more complicated than it is. I’ve talked about Trader Joe’s “Thanksgiving-in-a-bag” nuts before. This is a bag filled with rosemary, pecans and cranberries. The package says, “great for topping salads or to snack on.” I’m snacking on them while I’m typing. I’m almost out of my supply and my fingers are crossed that TJ’s still carries this product.

You don’t need a recipe – just mix equal amounts of pumpkin puree and goat cheese. Spread it on top of bread slices. Top with cranberries, nuts and seasonings and toast in oven until edges become crispy.

Think of this as dessert, though it’s not too sweet. Same as above, mix equal parts of pumpkin puree and Nutella. Top with mini-marshmallows and broil until marshmallows start to char. I toasted the bread/spread and then torched the added marshmallows.
