oozy eyesWhile Hurricane Sandy put a damper on our Trick-or-Treating, she didn’t ruin our Halloween completely. I can go out and buy a bunch more candy at 50% off to give the little goblins on Sunday.

Knowing we’d lose power, I quickly made a batch of red velvet cupcakes and vanilla cake pops to have ready to decorate. I couldn’t help but buy the electric cake pop baker; and I’m not disappointed. It was so easy.

I made a strawberry mascarpone filling (about 1/2 c cheese mixed with 1/4 c jam kitchen witchand a hint of Chambord), frosted with my standard frosting and topped with white chocolate covered vanilla cake pops. I added green to some of the frosting to help shape the eye, red gel for the blood shot veins, and a black M&M for the pupil. The decorating was done by candlelight.

While we haven’t been able to fight over candy yet, we enjoyed these cupcakes to keep us in the spirit. Dressing up as a nice kitchen witch helped too.
