My hubby. He wanted a new batch of granola and instead of sticking with Bob’s Red Mill oats, he picked up a box of oat bran. Bran, not oats. Oat bran and oats are two different things. I needed to make something out of it (more or less to help him feel better). We were visiting with the in laws yesterday morning and it came to me: old[er] people and bran is a natural. And they were the only ones who liked it. We, the young[er] people needed to slather them with butter, which then nullifies the healthy factor. The old[er] people in your life will appreciate you.

Why is this can #54 AND #53? The first batch was like lead. I tried using egg whites only. Really healthy doesn’t mean really gross.

Pumpkin Oat Bran Muffins

pumpkin oat bran muffinsWhat you need:

  • 2 1/2 c flour
  • 1 1/2 c oat bran
  • 1/2 c brown sugar
  • 2 tbs baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cardamom
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp cloves
  • 3 c pumpkin puree
  • 1/2 c pomegranate juice
  • 4 egg whites
  • 1 c dried cranberries

What you do:

  • Heat oven to 350°.
  • Prepare 2 12-muffin tins.
  • Mix all dry ingredients in lg bowl
  • Add pumpkin, juice and egg whites.
  • Mix well.
  • Fold in cranberries.
  • Divide batter among muffin cups.
  • Bake for 15-18 min.
