I had about a dozen egg whites leftover after making two batches of Apple and Sweet Potato Crème Brulee. Perfect opportunity to make some quiche. I also had a few sweet potatoes and leeks left from set props from the recent WMUR Cooks Corner episode. So why not make a spin on Spanish Tortilla, which uses potato? Thank goodness I took a picture after I cut the first slice. I swear there were only people in the office today. My colleagues gobbled up this quiche, as well as the second quiche using Olli Salumeria fennel salame. Both were crustless, knowing that at least one co-worker tries to gluten-free; I did sprinkle a few breadcrumbs on the bottom of the pie dish.

Everything but the mushrooms and nutmeg were purchased from my farmers market.

sweet potato quicheWhat you need:

  • 2 lg sweet potatoes, peeled and sliced into 1/8-1/4”” slices
  • 4 tbs EVOO divided
  • 2 lg leeks, cut lengthwise, then into slices and rinsed well – light green and white parts only
  • 2 garlic cloves, finely chopped
  • 1/2 c chopped mushrooms
  • 1/4 c bread crumbs
  • 1 c shredded baby Swiss (or other melting cheese)
  • 3 eggs
  • 3 egg whites
  • 1/2 c raw cream
  • 1/4 tsp nutmeg
  • Freshly ground sea salt and black pepper

What you do:

  • Heat oven to 425˚.
  • Prepare baking sheet with foil.layered roasted sweet potato chips
  • In lg bowl, toss potato slices with 2 tbs EVOO and place on baking sheet.
  • Season with salt and pepper.
  • Roast for about 15 min, until potatoes begin to caramelize, careful not to overcook.
  • Meanwhile, heat remaining EVOO in lg sautepan.
  • Add leeks and cook about 10 min, until leeks soften.
  • Add garlic and mushrooms and cook for about 5 min.
  • Reduce oven heat to 375˚.
  • Spray pie dish.layered leeks and mushroom
  • Sprinkle breadcrumbs on bottom of pie dish.
  • Layer sweet potatoes on bottom of pie dish.
  • Sprinkle with leek mixture.
  • Sprinkle with cheese.
  • In mixing bowl, whisk eggs, egg whites, cream and nutmeg.
  • Season with salt and pepper.
  • Pour egg mixture over leeks.
  • Bake until center is set, about 40 min.
