It was Daytona 500 and that meant a southern dish for this home’s racing fans. There was big controversy brewing over the appearance of #3.

For all the waffling that gets done on the track, I made quick fried chicken and waffles with sautéed chards with bacon.  The waffles used a flour and cornmeal base with buttermilk, maple syrup and some frozen peaches to add some additional moistness, and to give it more of a southern feel.

Make your favorite chicken gravy; I added a couple of spoonfuls of a ginger apple jelly (The Fresh Plate) that I picked up from my farmers market.

Buttermilk-Battered Chicken Tenders and Savory Cornbread Waffles

What you need:

  • 2 lg boneless, skinless chicken breasts
  • 1 c buttermilk
  • 2 tbs cayenne, divided
  • 1 tsp sweet paprika, divided
  • 1 c flour
  • 1/2 c panko
  • 1/4 c ground almonds
  • Freshly ground sea salt and black pepper

 

 

What you do:

  • Cut chicken into tender-sized strips.
  • In lg shallow covered baking dish mix buttermilk and 1 tbs cayenne and 1/2 tsp paprika.
  • Season with salt and pepper.
  • Add chicken, turning to coat.
  • Marinate at least 6 hours, overnight is preferable.
  • Heat about 1” veg oil in sauté pan.
  • Heat oven to 350˚.
  • In lg bowl mix flour, panko and almonds with remaining cayenne and paprika.
  • Season with salt and pepper.
  • Dredge chicken in flour mixture.
  • Place chicken in sauté pan and cook about 3 min on each side.
  • Place on baking sheet and keep warm in oven.
  • Serve waffles and chicken gravy.

Cornbread Waffles

What you need:

  • 1 3/4 c all-purpose flour
  • 1 1/4 c yellow cornmeal
  • 1 tbs baking powder
  • 1 tbs savory seasoning (ie, rosemary, thyme, etc)
  • 1 tsp sugar
  • 1 3/4 c buttermilk
  • 1 c frozen peach slices, chopped
  • 1/4 c maple syrup
  • 2 eggs
  • 3 tbs EVOO
  • Freshly ground sea salt and black pepper

What you do:

  • Heat waffle iron according to manufacturer’s instructions.
  • In lg bowl combine dry ingredients.
  • Season with salt and pepper.
  • Add milk, peaches, maple syrup, eggs and EVOO.
  • Mix until smooth.
  • Pour batter onto hot waffle iron and bake in batches.
  • Set aside and keep warm.

Sautéed Swiss Chard

What you need:

  • 1 bunch Swiss chard
  • 5 slices bacon
  • EVOO

What you do:

  • Drizzle about 1 tbs EVOO in sauté pan.
  • Add bacon and render until it starts to crisp.
  • Add chard and cook until wilting begins.

Plating:

  • Place waffle on plate.
  • Top with Swiss chard.
  • Arrange 2-3 chicken tenders on top.
  • Drizzle with gravy.
