zucchini cucumber Greek saladA summer favorite — cucumber with dill and yogurt — was the inspiration for this refreshing salad. The chance to use my new spiralizer again was also key in this creation. I’ve made this salad at least five times already this week. It was also the recipe I used to show my colleagues the difference in “spiralizing” tools. They’ve been eating the salad almost as much as I have.

I decided to go with an EVOO-balsamic dressing rather than yogurt. One day I added sliced cherry tomatoes too. This is my new summer salad with most ingredients, including the feta, from the Salem NH Farmers Market.


What you need:

  • 4 tbs EVOO
  • 2 tbs balsamic vinegar
  • 1/2 lemon, juiced
  • 1 tsp sugar
  • 1 cucumber, spiralized
  • 1 zucchini, spiralized
  • 1 sm onion, thinly sliced
  • 1/2 c cubed feta cheese
  • 2 tbs chopped fresh dill
  • Freshly ground sea salt and black pepper, to taste

What you do:

  • In sm bowl mix EVOO, vinegar and sugar.
  • Season with salt and pepper.
  • In lg bowl, mix cucumber, zucchini and onion.
  • Pour EVOO mixture over cucumber mixture and mix well.
  • Stir in feta and dill.
