I didn’t have plain old-fashioned oats in the house, but I did have a honey pecan granola … Why not save a few steps? Nothing is simpler than cooking up some apples and tossing them in the oven coated with granola.

  • 1 stk unsalted butter, divided
  • 1 1/2 c granola (I used Bob’s Red Mill Apple Blueberry)
  • 2 tbs all-purpose flour, divided
  • 1/4 c + 1 tbs organic brown sugar, divided
  • 5 Honeycrisp apples (or other baking apple), chopped
  • 1/2 lemon, juiced
  • 1/4 tsp cardamom
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp fleur de sel (French sea salt)

What you do:

  • Heat oven to 350˚.
  • Melt 4 tbs butter in cast iron skillet.
  • Add granola, 1 tbs flour and 1 tbs sugar to skillet.
  • Season with salt.
  • Toss to coat and cook until sugar is dissolved.
  • Transfer to bowl and set aside.
  • Melt remaining butter to skillet.
  • Add apples and lemon juice.
  • Sprinkle remaining sugar and spices over apples.
  • Toss to coat.
  • Cook until apples are softened and begin caramelizing (15 min)
  • Add remaining flour and gently toss.
  • Transfer to prepared baking dish (or bake in oven-proof skillet).
  • Sprinkle granola mixture evenly over apples.
  • Bake until mixture is crisp, about 30-35 min, being careful not to burn granola.
  • Serve warm with dollop of maple whipped cream, if desired.
