There is really no recipe here. I tore up some kale, added a few spinach leaves, thinly-sliced raw beets, thinly-sliced red onion, fresh, juicy blueberries and shaved local feta. All from the Salem NH Farmers Market.
The only TRICK is to allow the kale to “marinate” in your favorite dressing for an hour or so to help soften the leaves. I used a poppyseed dressing.
