The holiday season always includes some sort of “girl night.” My youngest still plans a festive gathering for her friends, though this year thankfully it’s hosted at a friend’s home. It’s fun to see their Christmas spirit, even while shopping for their Secret Santa gift, and even if the recipient is with us.

Even though we are not hosting, I wanted to make something. I can make a batch before delivering daughter, present and sleepover gear (yeah!) and it can “thaw” at the party until the girls are ready to drink. And, of course, I’ll make an extra batch to lift my worn-out spirit … and mine will include a shot of something more adult-friendly. (You don’t want it to sit in the freezer too long after making; transfer to the refrigerator at least 15 min before serving. Otherwise you’ll need a spoon. I forgot to put my Christmas-themed paper straws in the glasses.)

Eggnog is a staple in our house from Thanksgiving to Christmas. It’s a food sign that the holidays are here. It’s comfort in a glass, and spiked with a bit of bourbon it really can warm the soul on a chilly winter’s night. I can deal with a month of its calories, and because it’s so rich we don’t consume a lot, and we don’t only drink it straight out of the container.

cappuccino eggnog shakeYou can use eggnog in place of nearly anything that uses milk, or water. And while eggnog is typically sweet, it isn’t reserved only for desserts. Try French toast, crepes, pancakes, oatmeal, coffee, tea, savory bread pudding, ice creame, crème anglaise. panna cotta … the list is endless. In this recipe you can replace yogurt for the ice cream for a smoothie.

Shake leftovers? Use as a replacement for the cream in your coffee.

Here are three options:

Vanilla Eggnog Shake

What you need

  • 2 c French vanilla ice cream
  • 1 c eggnog
  • A couple of candy canes, crushed, for rim
  • For an adult version, add a shot of Bailey’s, Fireball, bourbon, brandy or rum.

Peppermint Eggnog Shake

What you need

  • 2 c French vanilla ice cream
  • 1 c eggnog
  • 1 tsp peppermint extract
  • A couple of candy canes, crushed, for rim
  • For an adult version, replace extract with peppermint liqueur

Cappuccino Latte Eggnog Shake

What you need

  • 2 c coffee gelato
  • 1 c eggnog
  • About 1/4 c crushed dark chocolate espresso beans or hazelnuts, for rim
  • For an adult version, add a shot of Bailey’s or Kahlua.

 

What you do:

  • In blender, whip ice cream, egg nog and extract (if using).
  • In a shallow bowl add about 1/4 c hot water and 1 tbs sugar and mix to dissolve.
  • Fill another shallow bowl with rim ingredients.
  • Dip the tips of serving glasses into sugar water and then into crushed rim ingredient.
  • Carefully fill glasses with shake mixture.
  • Place in freezer until ready to use.
  • For the adult version, spike each glass with a small shot of liqueur.
