Tortilla EspanolaA hint of summer calls for rose wine AND sangria, so why not combine the two. I had a delicious version at Boqueria DC and wanted to recreate it at home. But the spur-of-the-moment decision left me with only “shot-worthy” tequila in the house. At 5 p.m. on Sunday I couldn’t convince hubby to let me use the super good stuff for a mix. I ended up using vodka, really good vodka, but not super good tequila. I wanted to keep the color light, but raspberries, strawberries and blueberries will make its way into a sangria concoction in the near future.

What you need:

  • 1 bottle of rose wine
  • 1 c of vodka
  • 1 peach, pitted and diced
  • 1 apple, seeded and diced
  • 1 pear, seeded and diced
  • 1/2 lime peel, thinly sliced
  • 16 oz. pomegranate club soda

What you do:

  • Mix first 6 ingredients, reserving about 1/2 of peach, apple and pear.
  • Mix remaining diced fruit in small bowl.
  • Fill serving glass with ice.
  • Fill glass about 3/4 full with sangria.
  • Top with soda and stir gently.
  • Garnish with fruit.
