I’ve been a slacker and have fallen way behind in my self-imposed 99 cans of pumpkin recipe challenge. I’ve only got 25 more cans to go!
Here’s a quick, easy dip that tastes great with apples, graham crackers, Nilla wafers etc. I served this with pumpkin biscotti and by using individual bowls filled with dip double-dipping was encouraged.
What you need:
- 1 c heavy cream, whipped
- 1 8 oz pkg light cream cheese
- 1 8 oz tub mascarpone
- 1 c powdered sugar
- 1 c pumpkin puree
- 1 tbs pure vanilla
- 1 tbs pumpkin pie spice
What you do:
- In mixer beat cream cheese and mascarpone with powdered sugar until smooth.
- Mix in puree,vanilla and spice.
- Fold in whipped cream until well mixed.
- Serve as desired.
