Can #25: Pumpkin Cheesecake Dip

pumpkin-dipI’ve been a slacker and have fallen way behind in my self-imposed 99 cans of pumpkin recipe challenge. I’ve only got 25 more cans to go!

Here’s a quick, easy dip that tastes great with apples, graham crackers, Nilla wafers etc. I served this with pumpkin biscotti and by using individual bowls filled with dip double-dipping was encouraged.

What you need:

  • 1 c heavy cream, whipped
  • 1 8 oz pkg light cream cheese
  • 1 8 oz tub mascarpone
  • 1 c powdered sugar
  • 1 c pumpkin puree
  • 1 tbs pure vanilla
  • 1 tbs pumpkin pie spice

What you do:

  • In mixer beat cream cheese and mascarpone with powdered sugar until smooth.
  • Mix in puree,vanilla and spice.
  • Fold in whipped cream until well mixed.
  • Serve as desired.
