Caramelized Apple Clafoutis with Salted Caramel Sauce

apple clafoutis with salted caramel sauceIngredients:

  • 2 apples, peeled, cored and cut into 3/4-inch cubes
  • 3 tbs unsalted butter
  • ½ c sugar
  • 1/3 c all-purpose flour
  • ½ tsp baking powder
  • pinch of fleur de sel (French sea salt)
  • 3/4 c egg substitute (or 3 lg eggs)
  • 1/3 c whole milk
  • ¼ c crème fraîche
  • 2 tbs Calvados
  • soft cheese, such as camembert, brie or goat cheese, for serving
  • Caramel au beurre sale (salted caramel sauce)

Directions:

  • Preheat oven to 375°.
  • Melt butter in sauté pan.
  • Add apple.
  • Cook for about two minutes and add ¼ c sugar.
  • Continue cooking and stir until apples begin to caramelize, about 5 minutes.
  • Transfer apples and liquid to bowl and set aside.
  • In another bowl, whisk flour, baking powder and salt.
  • In mixing bowl, whisk eggs and remaining sugar until pale.
  • Add flour mixture, milk, crème fraîche and Calvados and mix until incorporated.
  • Add apple mixture and gently mix.
  • Pour the batter into six buttered and sugared  5-by-3 1/2-inch shallow baking dishes.
  • Bake for 35 minutes or until golden and just set.
  • Let cool until warm. *
  • Drizzle with caramel sauce.
  • Serve with wedge of cheese.
  • Hold back sighs.

* Either serve in baking dishes or run a knife around the edge of baking dish and place on serving plate.
