Frozen Mojito Individual Pies

frozen mojito pieJudgment-free zone – go ahead and use ready-to-bake graham shells. It’s okay. I used the mini-shells for individual pies.


For the filling:

  • 2 c heavy cream
  • 14 oz homemade condensed milk (or 1 14-ounce can sweetened condensed milk chilled)
  • 1 6-oz can frozen limeade concentrate (frozen, do not thaw)
  • 2 tbs light rum

For the garnish:

  • 2 c blueberries
  • 2 tbs sugar
  • 1 tbs fresh lemon juice


For the filling:

  • Whip the cream until stiff peaks form.
  • In another bowl, stir condensed milk and frozen limeade until mixed.
  • Gently fold the lemonade mixture into the whipped cream.
  • Pour the filling into the crust; best frozen overnight but I needed after six hours.

For the garnish:

  • About an hour before serving, toss berries in bowl.
  • Add sugar and lemon juice; mix to coat blueberries.

To assemble:

  • Remove pie from freezer and let sit for 5-10 minutes before cutting.
  • Top each slice – or individual pie – with berries.
