Peanut Butter Banana Mousse Trifle

peanut butter banana mousse trifleIngredients:

  • 4 oz mascarpone
  • 1/2 c creamy peanut butter
  • 1 c confectioners’ sugar, divided
  • 1 c heavy or whipping cream
  • 1 banana
  • 2 tbs brown sugar
  • 1 sleeve of Girl Scout Peanut Butter Patties (7 cookies)

Directions:

Caramelize banana:

  • Cut in half and place on baking sheet, cut side up.
  • Sprinkle with brown sugar.
  • Use kitchen torch and caramelize. (Broil in oven if you do not have a torch)
  • Slice into 1/2″ pieces and set aside.

Peanut Butter Mousse:

  • Whip cream with 1/2 c powdered sugar and set aside.
  • Beat mascarpone, peanut butter and 1/2 c whipping cream.

Cookies:

  • Crush cookies and set aside.

Assembly:

  • Layer individual serving dishes alternating cookies, mousse and whipped cream.
  • Repeat, ending with whipped cream.
  • Top with sliced bananas.
  • Drizzle with chocolate sauce, if desired.
