S’more Pumpkin Mini-Muffins {Please}

Makes five dozen mini-muffins.

S'more Pumpkin Mini-MuffinIngredients:

  • 6 chocolate graham cracker sheets
  • 1 box sugar-free chocolate cake mix (or vanilla)
  • 1 small can (15 ounces) pumpkin, not pumpkin pie filling
  • 1/2 c water
  • 1/3 c egg whites
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp ginger
  • 1 c semi-sweet chocolate chips
  • 120 mini marshmallows


  • Heat oven to 350°
  • Prepare muffin tins with cooking spray
  • Break graham cracker sheets into pieces and fit them into muffin tins to act as a crust; set aside remaining graham crackers and crumbs for topping
  • Combine cake mix, pumpkin, water, egg whites and spices with an electric mixer on low speed until combined
  • Stir in chocolate chips
  • Fill cups with batter using cookie scoop.
  • Bake for 7-9 minutes, or until toothpick comes out clean
  • Remove muffins from oven and immediately press 3 mini-marshmallows into top center of each and sprinkle with graham cracker crumbs
  • Place back in oven for 1 minute, until marshmallows begin to puff
  • Remove from oven
  • Fire up your kitchen torch until marshmallows begin to toast, if desired
  • Cool before removing muffins from pan
